BLENDED MALTS
Once called “vatted malts,” these whiskies are made of single malts. Only, with none of the grain whiskies that go into blends. A difference that is well worth exploring. 15.75

ISLAY STARTER
If you're new to Islay whiskies, firstly, it's pronounced “EYE-luh.” Secondly, there's no gentle start to these smoky drams, so buckle up 18.25
Ardbeg 10yr Raw, peaty power from a bold distillery. No holds barred
Caol Ila 10 yr “kul-EEluh” has a lighter, ashy smoke to it. Used in Johnnie Walker.
Lagavulin 16 yr Heavy smoke supported by rich, aged malt. Classic.

THE ADVANCED ISLAY
When you've gotten the taste for Islay peat, it's time to dig deeper and see what else the island has to offer. 18.25

Bowmore Darkest Dark smoke meets lush sherry wood; something unique happens

THE OTHER ISLANDS
Islay isn't the only island with a distillery in Scotland. Talisker makes beautiful whisky on the Isle of Skye, and Highland Park ages in 100% sherry casks on Orkney 17
Highland Park 12 yr Done mostly with Spanish oak sherry casks; fruit, smoke, wood
Highland Park 15 yr More American oak sherry casks; more vanilla, lighter

WOOD MAKES WHISKY
It's a rule of thumb that at least 50% of a whisky's flavor (and all of its color) comes from the barrel. Scotch whisky almost always ages in either ex-bourbon barrels or ex-sherry barrels. Taste the difference 14.5
